Portable Protein Pancakes!

This is my first blog, so I thought I'd start with one of my favorites. These are super easy snacks to make and take while you're out and about; avoiding snacking on vending machine junk or your son's left over french fries. Not that I ever do that. All you need is protein powder and egg whites!
I'm not a huge fan of measuring things, so I just toss in about 1/2 cup protein powder (any flavor will work), then add some egg whites. Mix it all together until it resembles pancake batter, toss on the griddle and flip! Add some spray butter and you're all set! If you're feeling extra sassy, cinnamon and stevia on the top is scrumptious.
